Almost 5 years ago Esnayder Cuartas had a sort of ephiphany whilst working in an information technology job in the financial district of London. We should all be grateful he did, because the result was Sabor, a chic and innovative Latin American restaurant in Islington where, as the name in Spanish suggests, it’s all about the flavour.

Esnayder had always been impressed with the Latin American cuisine available in New York, and as a Colombian who is passionate about his food, he quickly noticed a gap in the UK market for a more gourmet-centered experience. He regularly travels all over South America from Colombia to Chile, in search of recipes and ingredients, and the result is a constantly-changing menu which deconstructs traditional recipes from
all over the continent, from Brazilian Moqueca to Peruvian pan-fried Chicken and back to Ceviche in Colombian
marinade again – the Brazilian caldo verde, for example gets a fusion touch with the addition of chorizo sausages to the broth of potato and kale.

Another mouth-watering dish is the duck quesadilla and the dessert menu offers a tempting dilemma between the dulce de leche cheesecake and the caramel biscuits with coffee ice-cream.

The drinks are no less varied, with juices and cocktails made using South American typical fruits, Brazilian Açai
and passion fruit, to name just a few mouth-watering examples.
